Tom-Kha Chicken Soup

2 Servings


8 ounces sliced chicken breast
8 ounces coconut milk
8 ounces chicken broth
5 slices galangal
5 pcs lemon grass
3 pcs kaffir lime leaf
5 pcs each tomato,onion,mushroom
5 teaspoons lemon juice
1 teaspoon salt
2 tablespoons fish or soy sauce
2 tablespoons palm sugar


1)In a pan, boil chicken broth, coconut milk, galangal, lemon grass & kaffir lime leaves for 5 minutes stirring occasionally.
2) Add chicken, boil additional 5 minutes, stirring occasionally.
3) Reduce heat, add palm sugar, lemon juice, salt, and fish or soy sauce. Cook for 1-2 additional minutes while stirring.
4) Remove from heat.
5) Garnish with coriander, chopped green onion and serve.
