Properly Defrosting Sushi Grade Tuna & Other Sushi Sashimi Grade Fish

Most sushi grade fish used by restaurants has been blast frozen at -4°F for a minimum of 7 days to preserve the freshness and kill parasites.
There are different methods used to defrost sushi fish such as using cold or warm water. These processes will certainly speed the process, but will diminish the flavor and texture. Plan ahead and use this method to thaw. Remove the sushi fish from freezer, remove from wrapper, place it in a tupperware or glass container with lid, then place it in the refrigerator 8-10 hours before use. This allows it to thaw naturally maximizing the natural flavor and texture.
